Hash Brown Casserole

Ingredients

32 oz frozen shredded hash browns, defrosted

1/2 cup (1 stick) unsalted butter, melted

1- 10 oz can cream of cheddar soup

1 pint light sour cream

1/2 cup (~65g) onion, finely chopped

2 cups (8 oz) colby cheese, grated

salt & pepper, to taste

Directions

Preheat oven to 350°F (177°C).

In a large bowl, combine all ingredients, reserving 1/2 cup of colby cheese for topping.

Grease a 9x13 inch casserole dish and spread the hash brown mix evenly in it.

Top with the reserved cheese and bake 45-55 min, until hot and bubbly. Broil at the end if darker top is desired.
