✤32 oz frozen shredded hash browns, defrosted
✤1/2 cup (1 stick) unsalted butter, melted
✤1- 10 oz can cream of cheddar soup
✤1 pint light sour cream
✤1/2 cup (~65g) onion, finely chopped
✤2 cups (8 oz) colby cheese, grated
✤ salt & pepper, to taste
❖Preheat oven to 350°F (177°C).
❖In a large bowl, combine all ingredients, reserving 1/2 cup of colby cheese for topping.
❖Grease a 9x13 inch casserole dish and spread the hash brown mix evenly in it.
❖Top with the reserved cheese and bake 45-55 min, until hot and bubbly. Broil at the end if darker top is desired.
