✤1 lb ground turkey
✤1/2 tbsp olive oil
✤3 bell peppers, any color, seeded, cored & diced
✤1 large red onion, diced
✤1 tbsp red wine vinegar
✤1 pint cherry tomatoes, halved
✤1/2 cup (64g) pitted kalamata olives
✤6 oz crumbled feta cheese
✤12 eggs
✤1/3 cup milk (almond works good)
✤ oregano, salt & pepper, to taste
❖Preheat oven to 375°F (190°C) and grease a baking dish well.
❖Heat the oil in a skillet over medium-high heat. Once hot, add the meat and cook until done and slightly browned. Transfer meat into baking dish, leaving drippings in skillet.
❖Return pan to medium heat and add the peppers & onion. Cook until tender, about 5 minutes. Drizzle in the red wine vinegar and stir with a wooden spoon to deglaze the pan. Cook until the liquid evaporates.
❖Evenly spread the vegetable mix over the turkey in the baking dish. Top the dish with the tomatoes, olives & feta cheese.
❖In a large bowl, whisk together the eggs, milk & seasonings, then evenly pour over the casserole mix.
❖Bake for 45 minutes or until the middle is set and edges are brown. Cool for 5-10 minutes before serving.
