Greek Casserole

Ingredients

1 lb ground turkey

1/2 tbsp olive oil

3 bell peppers, any color, seeded, cored & diced

1 large red onion, diced

1 tbsp red wine vinegar

1 pint cherry tomatoes, halved

1/2 cup (64g) pitted kalamata olives

6 oz crumbled feta cheese

12 eggs

1/3 cup milk (almond works good)

oregano, salt & pepper, to taste

Directions

Preheat oven to 375°F (190°C) and grease a baking dish well.

Heat the oil in a skillet over medium-high heat. Once hot, add the meat and cook until done and slightly browned. Transfer meat into baking dish, leaving drippings in skillet.

Return pan to medium heat and add the peppers & onion. Cook until tender, about 5 minutes. Drizzle in the red wine vinegar and stir with a wooden spoon to deglaze the pan. Cook until the liquid evaporates.

Evenly spread the vegetable mix over the turkey in the baking dish. Top the dish with the tomatoes, olives & feta cheese.

In a large bowl, whisk together the eggs, milk & seasonings, then evenly pour over the casserole mix.

Bake for 45 minutes or until the middle is set and edges are brown. Cool for 5-10 minutes before serving.
