✤2 lbs asparagus, trimmed
✤4 tbsp unsalted butter, cut into 1/2-inch pieces
✤1 shallot, minced
✤2 cloves garlic, minced
✤1 ½ tsp salt
✤1/2 tsp pepper
✤1 tsp lemon zest
✤1-2 tsp lemon juice
✤2 tsp fresh thyme, chopped
✤1/4 cup (28g) Parmesan cheese, shredded
❖Preheat oven to 400°F (200°C). Line a rimmed baking sheet with foil, making sure there’s total coverage off all edges.
❖Arrange asparagus in center of foil running parallel to the short side of the sheet. Sprinkle the butter, shallot, garlic, salt, pepper & lemon zest evenly over the asparagus.
❖Place a second sheet of foil over the asparagus. Starting with one edge, pinch the sheets together and fold in toward center by ½ inch. Repeat folding 1-2 times to create a tight seal. Fold remaining three edges to create a sealed packet.
❖Bake 18 min, then remove sheet and let sit 5 min to continue to steam.
❖Carefully cut open the top of the packet, folding foil back. Sprinkle asparagus with the lemon juice, thyme & Parmesan, tossing gently with tongs to combine.
