Fattoush Salad

Ingredients

2 tbsp vegetable oil, divided

2 pita bread rounds, torn into bite-sized pieces

1/4 cup olive oil

1/4 cup lemon juice

2 cloves garlic, minced

salt & pepper, to taste

4 cups (~160g) romaine lettuce, torn

1/2 of a cucumber (~150g), coarsely chopped

1/2 cup (~60g) radishes, sliced

1/2 cup (~35g) green onions, sliced

1/4 cup chopped fresh mint and/or parsley

1/2 cup (4oz) crumbled feta cheese

Directions

In a 10-in skillet, heat 1 tbsp vegetable oil over med-high heat. Add half of the pita pieces and cook 2-3 min or until toasted, stirring occasionally. Transfer pita to paper towels to drain. Repeat with remaining veg oil & pita.

In a large serving bowl, whisk together the olive oil, lemon juice, garlic, salt & pepper.

Add all remaining ingredients to bowl and toss to combine. Top with the pita pieces. Serve immediately.
