

✤2 tbsp vegetable oil, divided
✤2 pita bread rounds, torn into bite-sized pieces
✤1/4 cup olive oil
✤1/4 cup lemon juice
✤2 cloves garlic, minced
✤ salt & pepper, to taste
✤4 cups (~160g) romaine lettuce, torn
✤1/2 of a cucumber (~150g), coarsely chopped
✤1/2 cup (~60g) radishes, sliced
✤1/2 cup (~35g) green onions, sliced
✤1/4 cup chopped fresh mint and/or parsley
✤1/2 cup (4oz) crumbled feta cheese
❖In a 10-in skillet, heat 1 tbsp vegetable oil over med-high heat. Add half of the pita pieces and cook 2-3 min or until toasted, stirring occasionally. Transfer pita to paper towels to drain. Repeat with remaining veg oil & pita.
❖In a large serving bowl, whisk together the olive oil, lemon juice, garlic, salt & pepper.
❖Add all remaining ingredients to bowl and toss to combine. Top with the pita pieces. Serve immediately.
