Egg Roll Bowls

Ingredients

1 tbsp olive oil

2” knob of ginger, peeled & grated

4 cloves garlic, minced

1 sweet onion, finely diced (~300g)

2 carrots, shredded (~235g)

1 lb lean ground turkey (or other ground meat)

1/2 cup chicken broth

6 cups (~480g) green cabbage, shredded

2 bell peppers, thinly sliced (~290g)

2 tbsp tamari or soy sauce

2 tbsp rice vinegar

1 tsp sesame oil

salt & pepper, to taste

Directions

Heat the oil in a large stock pot over medium heat. Add the ginger, garlic, onion & carrots and sauté for 3 min, stirring frequently. Add the ground turkey and cook about 5 min or until no longer pink, breaking up the meat as it cooks.

Pour in the broth to deglaze and scrape up any fond.

Add the cabbage & peppers and cook 6-8 min, stirring occasionally.

Once cabbage is tender, stir in the tamari, rice vinegar, sesame oil, salt & pepper. Top with sesame seeds if desired.
