✤1 tbsp olive oil
✤2” knob of ginger, peeled & grated
✤4 cloves garlic, minced
✤1 sweet onion, finely diced (~300g)
✤2 carrots, shredded (~235g)
✤1 lb lean ground turkey (or other ground meat)
✤1/2 cup chicken broth
✤6 cups (~480g) green cabbage, shredded
✤2 bell peppers, thinly sliced (~290g)
✤2 tbsp tamari or soy sauce
✤2 tbsp rice vinegar
✤1 tsp sesame oil
✤ salt & pepper, to taste
❖Heat the oil in a large stock pot over medium heat. Add the ginger, garlic, onion & carrots and sauté for 3 min, stirring frequently. Add the ground turkey and cook about 5 min or until no longer pink, breaking up the meat as it cooks.
❖Pour in the broth to deglaze and scrape up any fond.
❖Add the cabbage & peppers and cook 6-8 min, stirring occasionally.
❖Once cabbage is tender, stir in the tamari, rice vinegar, sesame oil, salt & pepper. Top with sesame seeds if desired.
