Egg & Broccoli Bars

Ingredients

1 medium head of broccoli, chopped into tiny florets (~192g)

2 medium carrots, peeled & grated (~118g)

1/2 tbsp olive or avocado oil

8 large eggs

1/4 cup (30g) oat flour

1/2 cup (56g) shredded low-fat mozzarella cheese

1/4 tsp garlic powder

salt & pepper, to taste

Directions

Preheat oven to 350°F (177°C) and line a rectangular 8x11-inch baking dish with parchment paper.

Heat the oil in a large skillet over medium-high heat. Add in the veggies and sauté for 2-3 minutes until they’re tender-crisp. Remove from heat and set aside.

In a large mixing bowl, whisk together the eggs, oat flour, cheese & seasonings until well combined. Fold in the veggies, then pour the mixture into the baking dish.

Bake for 15-20 minutes or until a knife inserted in the center comes out clean and it’s just set.

Allow to cool, then slice into bars. Refrigerate for up to 5 days.
