

✤1/2 cup (96g) sugar
✤1/3 cup (~27g) unsweetened cocoa powder
✤3 tbsp (24g) cornstarch
✤2 cups half & half
✤1 tsp vanilla extract
❖Add the sugar, cocoa powder & cornstarch to a med sauce pot and stir to combine.
❖Add the half & half and vanilla to the pot.
❖Place pot over medium heat and begin to whisk everything together. The cocoa will repel the liquid at first, but as it all warms, it will come together. Make sure to scrape bottom edges of pot for any hidden solids. Continue to heat mixture while whisking until it comes to a gentle simmer, at which point it will thicken.
❖Remove from heat. Serve warm or refrigerate until cool.
❖Place a layer of plastic or parchment on the surface of the pudding to prevent a skin from forming.
