✤1 ½ lbs chicken breast, cubed
✤1 ½ lbs (~643g) potato, cubed
✤ salt & pepper, to taste
✤2 cloves garlic, minced
✤2 cups chicken broth
✤3 lemons, juiced & zested
✤3 tbsp soy sauce or tamari
✤2 tbsp (16g) cornstarch
✤1/4 cup (84g) honey
✤1/2 cup (~54g) green onion, sliced
✤ sesame seeds, as desired for garnish
❖Spray the inside of the crockpot lightly with oil.
❖Add in the chicken, potato, salt, pepper, garlic & broth, stirring to combine. Cover and cook on high 3-4 hours or low 6-7 hours.
❖Once cooking time is almost complete, in a medium bowl, whisk together the lemon juice, zest, soy sauce, cornstarch & honey. Pour mixture into the crockpot and stir to coat. Cook on high for an additional 30 minutes or until sauce thickens.
❖Sprinkle with green onions & sesame seeds just before serving.
