✤1/2 cup (60g) raw pumpkin seeds
✤1/2 cup (80g) dried cranberries
✤1/4 cup (28g) raw pecans, coarsely chopped
✤1/4 cup (21g) walnuts, coarsely chopped
✤1/4 cup (33g) raw sunflower seeds
✤1/2 cup (50g) rolled oats
✤1/2 cup (52g) ground flaxseed
✤1 tsp cinnamon
✤1/4 tsp salt
✤1/4 cup (64g) peanut butter, melted
✤1/4 cup (84g) honey
✤1 tbsp coconut oil, melted
✤2 tsp vanilla extract
❖Preheat oven to 325°F (165°C) and line an 8x8 inch baking pan with parchment.
❖In a large bowl, stir together all dry ingredients. In a separate bowl, whisk together the wet ingredients until smooth.
❖Add the wet ingredients to the dry and mix everything together until well combined. Transfer mixture to the pan and firmly press into an evenly packed layer.
❖Bake about 25-27 min, or just until the top begins to golden. Allow to cool completely before slicing.
