Cranberry Granola Bars

Ingredients

1/2 cup (60g) raw pumpkin seeds

1/2 cup (80g) dried cranberries

1/4 cup (28g) raw pecans, coarsely chopped

1/4 cup (21g) walnuts, coarsely chopped

1/4 cup (33g) raw sunflower seeds

1/2 cup (50g) rolled oats

1/2 cup (52g) ground flaxseed

1 tsp cinnamon

1/4 tsp salt

1/4 cup (64g) peanut butter, melted

1/4 cup (84g) honey

1 tbsp coconut oil, melted

2 tsp vanilla extract

Directions

Preheat oven to 325°F (165°C) and line an 8x8 inch baking pan with parchment.

In a large bowl, stir together all dry ingredients. In a separate bowl, whisk together the wet ingredients until smooth.

Add the wet ingredients to the dry and mix everything together until well combined. Transfer mixture to the pan and firmly press into an evenly packed layer.

Bake about 25-27 min, or just until the top begins to golden. Allow to cool completely before slicing.
