Cranberry Brie

Ingredients

2 cups (~220g) fresh or frozen cranberries

3/4 cup water

1/2 cup (96g) white sugar

1/4 cup (48g) brown sugar

1/2 tsp cinnamon

1/2 tsp ginger

Dash of clove

Dash of allspice

1 medium Granny Smith apple, peeled, cored & chopped (~191g)

1/4 cup (40g) golden raisins

2- 8 oz Brie cheese rounds

Directions

Preheat oven to 350°F (177°C). If using fresh cranberries, rinse in cold water and drain.

In a medium saucepan, stir together the water & sugars. Bring to a boil, stirring to dissolve.

Boil rapidly for 5 min, then stir in the cranberries & spices. Return to a boil, then reduce heat and simmer for 5 min, stirring occasionally.

Stir in the apple & raisins and simmer 5 min more, or until desired consistency.

Meanwhile, place the cheese rounds in an oven-safe serving dish. Bake for 10 min, or until cheese is warm and softened.

Serve with the cranberry chutney.
