✤2 cups (240g) all-purpose flour
✤1/2 tsp baking soda
✤1/4 tsp salt
✤1/8 tsp cinnamon
✤2/3 cup (128g) white sugar
✤2/3 cup (128g) light brown sugar
✤1/2 stick unsalted butter, melted
✤2 egg whites
✤1/4 cup unsweetened applesauce
✤2 tsp vanilla extract
✤2/3 cup (~120g) white chocolate chips
✤1/3 cup (~53g) dried cranberries, chopped
For the frosting:
✤8 oz low fat cream cheese, softened
✤1/2 cup (60g) powdered sugar
✤1/3 cup (~53g) dried cranberries, chopped
✤1/2 tsp vanilla extract
❖Preheat oven to 350°F (177°C) and lightly grease a 9x13-in baking pan.
❖In a large bowl, whisk together the flour, baking soda, salt & cinnamon. In a separate bowl, whisk together the sugars, butter, egg whites, applesauce & vanilla until light and fluffy.
❖Mix the dry ingredients into the wet in 2 batches until batter is well blended. Fold in white chocolate chips & 1/3 cup cranberries.
❖Spread batter into the baking pan, using back of measuring cup to smooth evenly. Bake 10-14 min, until edges are light brown and toothpick test comes out clean. Don’t overbake! Let cool completely on wire rack.
❖Meanwhile, use a hand or stand mixer to beat the cream cheese, powdered sugar & vanilla until well blended.
❖Frost the cooled bars and sprinkle with remaining 1/3 cup dried cranberries. Cut into 12 squares.
❖Store in refrigerator.
