Cranberry Bliss Bars

Ingredients

2 cups (240g) all-purpose flour

1/2 tsp baking soda

1/4 tsp salt

1/8 tsp cinnamon

2/3 cup (128g) white sugar

2/3 cup (128g) light brown sugar

1/2 stick unsalted butter, melted

2 egg whites

1/4 cup unsweetened applesauce

2 tsp vanilla extract

2/3 cup (~120g) white chocolate chips

1/3 cup (~53g) dried cranberries, chopped

For the frosting:

8 oz low fat cream cheese, softened

1/2 cup (60g) powdered sugar

1/3 cup (~53g) dried cranberries, chopped

1/2 tsp vanilla extract

Directions

Preheat oven to 350°F (177°C) and lightly grease a 9x13-in baking pan.

In a large bowl, whisk together the flour, baking soda, salt & cinnamon. In a separate bowl, whisk together the sugars, butter, egg whites, applesauce & vanilla until light and fluffy.

Mix the dry ingredients into the wet in 2 batches until batter is well blended. Fold in white chocolate chips & 1/3 cup cranberries.

Spread batter into the baking pan, using back of measuring cup to smooth evenly. Bake 10-14 min, until edges are light brown and toothpick test comes out clean. Don’t overbake! Let cool completely on wire rack.

Meanwhile, use a hand or stand mixer to beat the cream cheese, powdered sugar & vanilla until well blended.

Frost the cooled bars and sprinkle with remaining 1/3 cup dried cranberries. Cut into 12 squares.

Store in refrigerator.
