✤1 lb baby potatoes
✤1 tbsp vegetable oil
✤1 lb ground meat of choice
✤1/2 cup (56g) breadcrumbs
✤1 egg
✤1 tbsp (15g) low-fat sour cream
✤1 clove garlic, minced
✤1/2 tsp dried dill
✤1/2 tsp caraway seeds
✤1/2 tsp mustard powder
✤1/4 tsp ground grains of paradise
✤ salt, to taste
✤1 cup boiling water
✤1/4 cup (60g) low-fat sour cream
✤3 tbsp (50g) tomato paste
❖Preheat oven to 450°F (230°C).
❖Rub the potatoes all over with the oil and place them on a baking sheet. Roast for about 15 minutes, or until somewhat soft but not cooked all the way through.
❖Make the meatballs by combining the ground meat, breadcrumbs, egg, 1 tbsp sour cream, garlic & seasonings. Mix thoroughly and form evenly into balls roughly the size of the potatoes.
❖When potatoes are done, remove from oven and turn heat down to 350°F (177°C).
❖Cut the potatoes into roughly 1/2-inch thick rounds, keeping the slices all together in a potato shape. Alternate the potatoes & meatballs in a casserole dish until full.
❖In a small bowl, mix together the boiling water, ¼ cup sour cream & tomato paste, then pour over the meatballs & potatoes.
❖Bake for 25-30 minutes, until the meatballs are cooked through.
