✤3 VERY ripe bananas, mashed (~300g)
✤1/3 cup (112g) honey
✤1 large egg, room temperature
✤1/2 tbsp vanilla extract
✤1/4 cup vegetable oil
✤1/4 cup almond milk
✤1¾ cups (196g) whole wheat flour
✤1 tsp baking soda
✤1-2 tsp cinnamon
✤1/2 tsp salt
✤1/2 cup (60g) chopped walnuts
❖Preheat oven to 350°F (177°C) and lightly grease a 12-ct muffin pan.
❖In a large bowl, mix together the mashed bananas, honey, egg, vanilla, vegetable oil & milk until well combined. In a separate bowl, whisk together the flour, baking soda, cinnamon & salt.
❖Add the dry to the wet and mix together gently until just combined; don’t over mix! Gently fold in walnuts.
❖Divide batter evenly into muffin cups. Bake 20-25 min or until toothpick test comes out with just a few crumbs attached.
❖Cool muffins in pan 5 min, then remove and transfer to a wire rack to finish cooling.
