Cinnamon Walnut Banana Muffins

Ingredients

3 VERY ripe bananas, mashed (~300g)

1/3 cup (112g) honey

1 large egg, room temperature

1/2 tbsp vanilla extract

1/4 cup vegetable oil

1/4 cup almond milk

1¾ cups (196g) whole wheat flour

1 tsp baking soda

1-2 tsp cinnamon

1/2 tsp salt

1/2 cup (60g) chopped walnuts

Directions

Preheat oven to 350°F (177°C) and lightly grease a 12-ct muffin pan.

In a large bowl, mix together the mashed bananas, honey, egg, vanilla, vegetable oil & milk until well combined. In a separate bowl, whisk together the flour, baking soda, cinnamon & salt.

Add the dry to the wet and mix together gently until just combined; don’t over mix! Gently fold in walnuts.

Divide batter evenly into muffin cups. Bake 20-25 min or until toothpick test comes out with just a few crumbs attached.

Cool muffins in pan 5 min, then remove and transfer to a wire rack to finish cooling.
