Chocolate Pomegranate Cups

Ingredients

1 cup (~150g) dark chocolate

1/2 tbsp coconut oil

1-2 large pomegranates, seeds removed

Directions

Melt the chocolate & coconut oil together in a double boiler setup.

Lightly grease a mini muffin tin or silicone.

Scoop about 1/2 tbsp of melted chocolate into a cup in the tin, top with some pomegranate seeds, then drizzle a bit of chocolate over the top. Continue these steps until you run out of chocolate.

Allow to sit in refrigerator for 15 minutes or until set. Store in an airtight container in the fridge up to 3 days.
