✤1 cup (~150g) dark chocolate
✤1/2 tbsp coconut oil
✤1-2 large pomegranates, seeds removed
❖Melt the chocolate & coconut oil together in a double boiler setup.
❖Lightly grease a mini muffin tin or silicone.
❖Scoop about 1/2 tbsp of melted chocolate into a cup in the tin, top with some pomegranate seeds, then drizzle a bit of chocolate over the top. Continue these steps until you run out of chocolate.
❖Allow to sit in refrigerator for 15 minutes or until set. Store in an airtight container in the fridge up to 3 days.
