Chocolate Lace Cookie Sandwiches

Ingredients

1/2 cup (60g) all-purpose flour, sifted

1/2 cup (96g) granulated sugar

1/2 tsp cinnamon

1/4 tsp baking powder

Pinch of salt

1/2 cup (48g) old-fashioned oats

1/4 cup (4 tbsp) unsalted butter, melted

2 tbsp milk

2 tbsp (42g) honey

1 tsp vanilla extract

3 oz dark chocolate, melted

Directions

Preheat oven to 375°F (190°C). Line 2 baking sheets with parchment or silicone.

In a med bowl, whisk together all dry ingredients.

In a stand mixer bowl, combine melted butter, milk, honey & vanilla and mix until smooth. Slowly add in the dry ingredients and mix to combine.

Drop 1 level tsp of batter onto baking sheets, leaving space in between so there’s 12 per sheet; they will spread out while baking!

Bake 7-9 min until cooked through and golden brown.

Remove from oven and let cookies cool on baking sheet 2 min. Carefully transfer cookies to a wire rack and cool completely.

Once cool, spread one cookie with a thin layer of melted chocolate and sandwich with another cookie on top. Repeat with remaining until there’s 12 sandwiches.

Store in an airtight container at room temperature.
