

✤1/2 cup (60g) all-purpose flour, sifted
✤1/2 cup (96g) granulated sugar
✤1/2 tsp cinnamon
✤1/4 tsp baking powder
✤Pinch of salt
✤1/2 cup (48g) old-fashioned oats
✤1/4 cup (4 tbsp) unsalted butter, melted
✤2 tbsp milk
✤2 tbsp (42g) honey
✤1 tsp vanilla extract
✤3 oz dark chocolate, melted
❖Preheat oven to 375°F (190°C). Line 2 baking sheets with parchment or silicone.
❖In a med bowl, whisk together all dry ingredients.
❖In a stand mixer bowl, combine melted butter, milk, honey & vanilla and mix until smooth. Slowly add in the dry ingredients and mix to combine.
❖Drop 1 level tsp of batter onto baking sheets, leaving space in between so there’s 12 per sheet; they will spread out while baking!
❖Bake 7-9 min until cooked through and golden brown.
❖Remove from oven and let cookies cool on baking sheet 2 min. Carefully transfer cookies to a wire rack and cool completely.
❖Once cool, spread one cookie with a thin layer of melted chocolate and sandwich with another cookie on top. Repeat with remaining until there’s 12 sandwiches.
❖Store in an airtight container at room temperature.
