Chocolate Chip Scones

Ingredients

3/4 cup (170g) plain fat-free yogurt

1/4 cup (48g) sugar

2 tsp vanilla extract

1 large egg

1 cup (120g) all-purpose flour

1 cup white whole wheat flour

1 tbsp baking powder

1/2 tsp salt

3 tbsp COLD unsalted butter, cut into small pieces

3/4 cup (~135g) dark chocolate chips

1 large egg white, lightly beaten

1½ tbsp (18g) sugar

Directions

Preheat oven to 375° (190°C).

In a med bowl, whisk together the yogurt, sugar, vanilla & egg; set aside.

In a large bowl, whisk together the flours, baking powder & salt. Using a pastry cutter, cut in the cold butter until mixture resembles coarse meal. Gently fold in chocolate chips, then add the yogurt mix, stirring until just moist.

Place dough onto a floured surface and knead lightly 4x with floured hands. Form dough into a 9-in round and place on a lightly greased baking sheet. Cut into 8 even wedges all the way through, cover with plastic and chill in fridge 30-60 min.

Brush egg white over dough and sprinkle evenly with the 1½ tbsp sugar. Bake 18-20 min, until golden.
