✤1/3 cup (64g) granulated sugar
✤1/2 cup (96g) light brown sugar
✤1 egg white, room temperature
✤2 tbsp unsweetened applesauce
✤1 tsp vanilla extract
✤1 cup (120g) all-purpose flour
✤1/2 tsp baking soda
✤1/8 tsp salt
✤1/2 cup (~90g) mini chocolate chips
✤1½ cups vanilla frozen yogurt
✤1/2 cup sprinkles
❖Preheat oven to 350°F (177°C). Line 2 baking sheets with parchment or silicone.
❖In a med bowl, whisk together the flour, baking soda & salt. In a separate large bowl, whisk together the sugars, egg white, applesauce & vanilla until light and fluffy. In two additions, add the dry ingredients to the wet and mix until blended. Gently fold in the chocolate chips.
❖Place 24 even balls about 1-in apart on the baking sheets. Bake 8-10 min.
❖Remove from oven and let stand 10 min before transferring cookies to wire racks to cool completely.
❖When totally cool, place 1½ tbsp frozen yogurt between 2 cookies and sandwich together. Roll edges in sprinkles and place on platter in freezer.
