Chocolate Chip Fro-Yo Sandwiches

Ingredients

1/3 cup (64g) granulated sugar

1/2 cup (96g) light brown sugar

1 egg white, room temperature

2 tbsp unsweetened applesauce

1 tsp vanilla extract

1 cup (120g) all-purpose flour

1/2 tsp baking soda

1/8 tsp salt

1/2 cup (~90g) mini chocolate chips

1½ cups vanilla frozen yogurt

1/2 cup sprinkles

Directions

Preheat oven to 350°F (177°C). Line 2 baking sheets with parchment or silicone.

In a med bowl, whisk together the flour, baking soda & salt. In a separate large bowl, whisk together the sugars, egg white, applesauce & vanilla until light and fluffy. In two additions, add the dry ingredients to the wet and mix until blended. Gently fold in the chocolate chips.

Place 24 even balls about 1-in apart on the baking sheets. Bake 8-10 min.

Remove from oven and let stand 10 min before transferring cookies to wire racks to cool completely.

When totally cool, place 1½ tbsp frozen yogurt between 2 cookies and sandwich together. Roll edges in sprinkles and place on platter in freezer.
