✤1/2 cup (90g) uncooked quinoa
✤3/4 cup unsweetened lite coconut milk
✤Splash of water
✤2 tbsp (42g) honey
✤1 tbsp (5g) cocoa powder
✤1/2 tsp vanilla extract
✤Pinch of salt
✤Optional topping of fruit
❖Rinse the quinoa in a fine mesh strainer for a couple of minutes.
❖Add all ingredients (except optional fruit) to an instant pot cooker and mix together.
❖Seal lid with vent shut and use rice setting to cook on low pressure for 12 minutes. When pressure is released, remove lid and fluff quinoa with fork.
❖Top with fruit as desired.
