Chocolate Breakfast Quinoa

Ingredients

1/2 cup (90g) uncooked quinoa

3/4 cup unsweetened lite coconut milk

Splash of water

2 tbsp (42g) honey

1 tbsp (5g) cocoa powder

1/2 tsp vanilla extract

Pinch of salt

Optional topping of fruit

Directions

Rinse the quinoa in a fine mesh strainer for a couple of minutes.

Add all ingredients (except optional fruit) to an instant pot cooker and mix together.

Seal lid with vent shut and use rice setting to cook on low pressure for 12 minutes. When pressure is released, remove lid and fluff quinoa with fork.

Top with fruit as desired.
