Chocolate Avocado Brownies

Ingredients

1 ripe avocado, mashed (~186g)

1/2 cup (40g) cocoa powder

2 eggs, room temperature

1/2 cup (96g) sugar

2 tbsp butter

1 tsp baking powder

1/4 tsp salt

1 tsp vanilla extract

1/3 cup (57g) dark chocolate chips

Directions

Preheat oven to 325°F (165°C). Grease an 8x8-inch pan or line with parchment paper.

In a large bowl, mix together all ingredients and pour batter into the pan.

Bake for 45 minutes or until edges look baked, center will be set (not wiggly), and the top is just beginning to crack.

Let cool completely before slicing.
