Chicken & Red Pepper Tabbouleh

Ingredients

1/2 cup (90g) uncooked bulgur

1 ½ cups (~339g) fresh diced tomato

3/4 cup (~3.5 oz) cooked shredded chicken breast

1 cup (or more to taste) fresh parsley, minced

1/2 cup (~94g) red bell pepper, finely chopped

1/2 cup (~85g) cucumber, diced

1/4 cup fresh mint, minced

1 ½ tbsp lemon juice (or more as needed)

1 tbsp olive oil

1/2 tsp salt

1/2 tsp black pepper

Directions

Combine bulgur & ½ cup boiling water in a large bowl. Cover and let stand 15 minutes or until bulgur is tender. Drain well and return to the bowl. Let cool.

Add all remaining ingredients and toss well.
