✤1/2 cup (90g) uncooked bulgur
✤1 ½ cups (~339g) fresh diced tomato
✤3/4 cup (~3.5 oz) cooked shredded chicken breast
✤1 cup (or more to taste) fresh parsley, minced
✤1/2 cup (~94g) red bell pepper, finely chopped
✤1/2 cup (~85g) cucumber, diced
✤1/4 cup fresh mint, minced
✤1 ½ tbsp lemon juice (or more as needed)
✤1 tbsp olive oil
✤1/2 tsp salt
✤1/2 tsp black pepper
❖Combine bulgur & ½ cup boiling water in a large bowl. Cover and let stand 15 minutes or until bulgur is tender. Drain well and return to the bowl. Let cool.
❖Add all remaining ingredients and toss well.
