✤2½ lbs boneless shoulder country ribs
✤2 tbsp (24g) sugar
✤1/4 cup (84g) honey
✤1/2 cup (160g) hoisin sauce
✤6 tbsp (102g) soy sauce or tamari
✤2 tsp Chinese five-spice powder
✤2 tsp liquid smoke
✤1/4 cup chicken stock
✤2 tbsp vegetable oil
❖Place ribs in a heavy resealable plastic bag. In a small bowl, whisk together all remaining ingredients. Pour it over the ribs and seal the bag. Massage the bag to coat the ribs. Let marinate at least 20 min - 1 hour, or overnight in the fridge.
❖When ready, place ribs & marinade in the inner pot of an Instant Pot. Select Pressure cook, adjust pressure to High and time to 18 min.
❖While pork cooks, preheat broiler. Place a wire rack on a baking sheet.
❖After cooking, quick release the pressure. Unlock the lid and use tongs to move the ribs to the rack.
❖Select Sauté on the cooker and adjust to High heat. Boil the sauce 10 min, or until thickened like a BBQ sauce.
❖Baste the ribs with some marinade and broil until crisp and browned, 3-5 min. Turn and baste with more sauce and broil another few min. Serve.
