✤4½ cups (~383g) riced cauliflower
✤1/2 tsp salt
✤1/4 cup (~59g) marinara sauce, plus extra for serving
✤1 cup (112g) shredded mozzarella cheese
✤2 large eggs, beaten
✤1/2 cup (56g) plain breadcrumbs
✤2 tbsp (14g) parmesan cheese, grated
❖Heat a large skillet over medium heat. Add the cauliflower, salt & marinara and cook for 6 min, stirring until cauliflower is tender and heated through. Remove from heat and add the mozzarella, stirring well to mix. Let cool 3-4 min, until it’s easy to handle.
❖In a small bowl, lightly beat the eggs. In a separate small bowl, mix together the breadcrumbs & parmesan.
❖Roll the cauliflower mix into 12 even-sized balls. Dip a ball in the egg wash, then roll in the crumbs well. Transfer to a baking sheet lined with parchment or silicone and repeat with all balls. Spray tops with cooking spray.
❖To bake in oven, 425°F (220°C) for 20-25 min, until golden. To bake in air fryer, 400°F (200°C) for 9 min, flipping halfway, until golden.
❖Serve with extra marinara, as desired.
