✤1 ½ lbs boneless pork loin roast, cut into 1-inch pieces
✤2 cloves garlic, minced
✤1 tbsp chili powder
✤1 tsp ground chipotle chile pepper
✤1 tsp cumin
✤1/2 tsp salt
✤1/2 tbsp vegetable oil
✤2- 14.5 oz cans diced tomatoes, undrained
✤1- 15 oz can black beans, drained & rinsed
✤1- 8 oz can tomato sauce
✤1 cup (170g) corn
✤1 mango, peeled, pitted & diced (~210g)
✤1/4 cup (~32g) red onions, slivered
❖In a large bowl, combine the pork, garlic & all seasonings and mix well.
❖In a large non-stick skillet, heat the oil over medium-high heat. Cook pork until just browned on all sides, stirring occasionally.
❖Transfer pork to slow cooker, then add the tomatoes, beans, tomato sauce & corn. Stir, cover, and cook on low for 4-5 hours or on high for 2-2 ½ hours.
❖In a small bowl, combine the mango & onion. Spoon mixture over each serving.
