Caribbean Pork Chili

Ingredients

1 ½ lbs boneless pork loin roast, cut into 1-inch pieces

2 cloves garlic, minced

1 tbsp chili powder

1 tsp ground chipotle chile pepper

1 tsp cumin

1/2 tsp salt

1/2 tbsp vegetable oil

2- 14.5 oz cans diced tomatoes, undrained

1- 15 oz can black beans, drained & rinsed

1- 8 oz can tomato sauce

1 cup (170g) corn

1 mango, peeled, pitted & diced (~210g)

1/4 cup (~32g) red onions, slivered

Directions

In a large bowl, combine the pork, garlic & all seasonings and mix well.

In a large non-stick skillet, heat the oil over medium-high heat. Cook pork until just browned on all sides, stirring occasionally.

Transfer pork to slow cooker, then add the tomatoes, beans, tomato sauce & corn. Stir, cover, and cook on low for 4-5 hours or on high for 2-2 ½ hours.

In a small bowl, combine the mango & onion. Spoon mixture over each serving.
