Bulgur Waldorf Salad

Ingredients

3/4 cup (135g) bulgur

3/4 cup boiling water

1/3 cup olive oil

1/4 cup fresh parsley, chopped

1/4 cup cider vinegar

1/4 cup lemon juice

1 tbsp (12g) sugar

1 tsp salt

1/2 tsp cinnamon

1 large Granny Smith apple, cored & chopped (~198g)

1 large sweet red apple, cored & chopped (~198g)

1/2 cup (~72g) radish, finely sliced

1/2 cup (80g) dried cranberries or golden raisins

1/2 cup (~103g) seedless green or red grapes

Butter lettuce leaves

Directions

In a small bowl, combine the bulgur & boiling water. Cover and let sit 15 min, until all water is absorbed.

In a separate small bowl, whisk together the oil, parsley, vinegar, lemon juice, sugar, salt & cinnamon. Drizzle over the warm bulgur, stirring to coat.

In a large bowl, combine the apples, radish, dried fruit & grapes. Stir in the bulgur mixture and mix well.

If not serving immediately, cover and chill up to 4 hours. Serve over the lettuce leaves.
