✤3/4 cup (135g) bulgur
✤3/4 cup boiling water
✤1/3 cup olive oil
✤1/4 cup fresh parsley, chopped
✤1/4 cup cider vinegar
✤1/4 cup lemon juice
✤1 tbsp (12g) sugar
✤1 tsp salt
✤1/2 tsp cinnamon
✤1 large Granny Smith apple, cored & chopped (~198g)
✤1 large sweet red apple, cored & chopped (~198g)
✤1/2 cup (~72g) radish, finely sliced
✤1/2 cup (80g) dried cranberries or golden raisins
✤1/2 cup (~103g) seedless green or red grapes
✤ Butter lettuce leaves
❖In a small bowl, combine the bulgur & boiling water. Cover and let sit 15 min, until all water is absorbed.
❖In a separate small bowl, whisk together the oil, parsley, vinegar, lemon juice, sugar, salt & cinnamon. Drizzle over the warm bulgur, stirring to coat.
❖In a large bowl, combine the apples, radish, dried fruit & grapes. Stir in the bulgur mixture and mix well.
❖If not serving immediately, cover and chill up to 4 hours. Serve over the lettuce leaves.
