Bruschetta Chicken Casserole

Ingredients

1/2 tbsp olive oil

1 lb chicken breast, cut into bite sized pieces

6 ripe Roma tomatoes, chopped

3 cloves garlic, miced

1 tsp dried oregano (or to taste)

salt & pepper, to taste

1/4 cup balsamic vinegar

1 cup (112g) shredded mozzarella cheese

Handful of fresh basil leaves, chopped

Directions

Preheat oven to 375°F (190°C).

Heat the oil in a skillet over medium-high heat, then add the chicken and season with salt & pepper. Cook, stirring occasionally, until golden brown on the sides and almost cooked through.

Grease an 8x8-inch baking dish, then transfer the chicken to the dish. Top with the tomatoes, oregano, garlic & balsamic. Cover with the mozzarella and a pinch more of salt & pepper.

Bake for 18-20 minutes, just until cheese is melty and sauce is bubbling.

Remove from oven, cover, and allow to rest for 5 minutes. Garnish with the fresh basil.
