✤1/2 tbsp olive oil
✤1 lb chicken breast, cut into bite sized pieces
✤6 ripe Roma tomatoes, chopped
✤3 cloves garlic, miced
✤1 tsp dried oregano (or to taste)
✤ salt & pepper, to taste
✤1/4 cup balsamic vinegar
✤1 cup (112g) shredded mozzarella cheese
✤Handful of fresh basil leaves, chopped
❖Preheat oven to 375°F (190°C).
❖Heat the oil in a skillet over medium-high heat, then add the chicken and season with salt & pepper. Cook, stirring occasionally, until golden brown on the sides and almost cooked through.
❖Grease an 8x8-inch baking dish, then transfer the chicken to the dish. Top with the tomatoes, oregano, garlic & balsamic. Cover with the mozzarella and a pinch more of salt & pepper.
❖Bake for 18-20 minutes, just until cheese is melty and sauce is bubbling.
❖Remove from oven, cover, and allow to rest for 5 minutes. Garnish with the fresh basil.
