✤2 medium heads of broccoli, chopped into bite sized florets (~300g)
✤2 large carrots, peeled & shredded
✤2 cups (340g) corn
✤1/2 cup (80g) golden raisins
✤6 slices of bacon, cooked until crispy & crumbled
✤1/2 cup shredded cheese of choice
✤1/2 cup chopped pecans or other nut
For the Dressing:
✤1 cup (~255g) plain Greek or skyr yogurt
✤2 tbsp (42g) honey
✤2 tbsp dijon mustard
✤2 tsp apple cider vinegar
✤3 tbsp (~44g) sweet onion, minced
❖In a medium bowl, whisk together all dressing ingredients and refrigerate until ready to use.
❖In a large bowl, stir together the broccoli, carrots, corn, raisins & nuts. Add the dressing and toss well.
❖Sprinkle the crumbled bacon on top, then sprinkle the cheese, and stir well.
❖Serve immediately or place in the refrigerator covered for up to one hour before serving.
