Broccoli Bacon Salad

Ingredients

2 medium heads of broccoli, chopped into bite sized florets (~300g)

2 large carrots, peeled & shredded

2 cups (340g) corn

1/2 cup (80g) golden raisins

6 slices of bacon, cooked until crispy & crumbled

1/2 cup shredded cheese of choice

1/2 cup chopped pecans or other nut

For the Dressing:

1 cup (~255g) plain Greek or skyr yogurt

2 tbsp (42g) honey

2 tbsp dijon mustard

2 tsp apple cider vinegar

3 tbsp (~44g) sweet onion, minced

Directions

In a medium bowl, whisk together all dressing ingredients and refrigerate until ready to use.

In a large bowl, stir together the broccoli, carrots, corn, raisins & nuts. Add the dressing and toss well.

Sprinkle the crumbled bacon on top, then sprinkle the cheese, and stir well.

Serve immediately or place in the refrigerator covered for up to one hour before serving.
