✤2 cups (~190g) broccoli florets, finely chopped
✤8 thin chicken breast cutlets, about 3-4 oz each
✤1 large egg
✤2 tsp water
✤pinch of salt
✤3/4 cup (84g) breadcrumbs
✤8 oz cheddar cheese, sliced & divided by ounce
❖Preheat oven to 425°F (220°C) or air fryer to 400°F (200°C).
❖Place broccoli in a microwave safe bowl with 1 tbsp water; cover and cook 1 min, until soft. Drain and season with 1/4 tsp salt.
❖In a small bowl, beat together the egg, 2 tsp water & pinch of salt; set aside.
❖If chicken isn’t already 1/4-inch thin, pound out with mallet. Season both sides of chicken with salt.
❖Place 1 oz cheese slice in center of chicken and top with 2 tbsp broccoli. Roll the chicken up to completely cover filling, using toothpicks to secure ends as needed.
❖Dip chicken into the egg wash, then breadcrumbs, then transfer to a baking sheet or air fryer. In oven, bake about 25 min. In air fryer, cook in batches about 14-16 min, turning halfway, until chicken is cooked through.
