✤2 cups (240g) all-purpose flour
✤1/4 cup (48g) sugar
✤1/4 tsp salt
✤1/2 tsp baking soda
✤1 tbsp baking powder
✤1/4 cup (half stick) unsalted butter, frozen
✤3/4 cup (~170g) plain fat-free yogurt
✤1 large egg
✤1 tsp vanilla extract
✤1 cup (~179g) blueberries
❖Preheat oven to 400°F (200°C).
❖In a large bowl, whisk together the dry ingredients.
❖Using the large holes of a cheese grater, grate the frozen butter into the flour and mix well.
❖In a separate medium bowl, mix the yogurt, egg & vanilla.
❖Using a fork, slowly stir the wet into the dry ingredients, until mix is all moistened but not overworked. Fold in the blueberries gently.
❖Line a baking sheet with parchment paper. Create 8 even-sized balls and place onto sheet.
❖Bake 18 min, until golden. Remove and let cool 5 min.
