Blueberry Scones

Ingredients

2 cups (240g) all-purpose flour

1/4 cup (48g) sugar

1/4 tsp salt

1/2 tsp baking soda

1 tbsp baking powder

1/4 cup (half stick) unsalted butter, frozen

3/4 cup (~170g) plain fat-free yogurt

1 large egg

1 tsp vanilla extract

1 cup (~179g) blueberries

Directions

Preheat oven to 400°F (200°C).

In a large bowl, whisk together the dry ingredients.

Using the large holes of a cheese grater, grate the frozen butter into the flour and mix well.

In a separate medium bowl, mix the yogurt, egg & vanilla.

Using a fork, slowly stir the wet into the dry ingredients, until mix is all moistened but not overworked. Fold in the blueberries gently.

Line a baking sheet with parchment paper. Create 8 even-sized balls and place onto sheet.

Bake 18 min, until golden. Remove and let cool 5 min.
