✤1/2 tbsp olive oil
✤2 bell peppers, diced (~400g)
✤4 green onions, finely chopped (~24g)
✤3 cloves garlic, minced
✤3 jalapeños, seeded & diced
✤2 cups (520g) cooked black beans
✤2 tsp cumin
✤8 large eggs
✤1/4 cup salsa of choice
✤1 tbsp fresh parsley, finely chopped
✤ salt & pepper, to taste
✤1/2 cup (56g) cheddar cheese, shredded
❖Preheat oven to 350°F (177°C).
❖In a large cast iron or oven-safe skillet, heat the oil over medium heat. Add the bell peppers, onions, garlic & jalapeño and sauté for 3-4 min. Stir in the beans & cumin.
❖In a large bowl, whisk together the eggs, salsa, parsley, salt & pepper. Pour this mixture over the beans & veggies, then gently stir to combine. Cook, uncovered, for 2 min or until eggs start to set.
❖Top with the cheese.
❖Transfer pan to oven and bake 8-10 min or until eggs are completely set and cheese is melted.
