Black Bean Jalapeño Frittata

Ingredients

1/2 tbsp olive oil

2 bell peppers, diced (~400g)

4 green onions, finely chopped (~24g)

3 cloves garlic, minced

3 jalapeños, seeded & diced

2 cups (520g) cooked black beans

2 tsp cumin

8 large eggs

1/4 cup salsa of choice

1 tbsp fresh parsley, finely chopped

salt & pepper, to taste

1/2 cup (56g) cheddar cheese, shredded

Directions

Preheat oven to 350°F (177°C).

In a large cast iron or oven-safe skillet, heat the oil over medium heat. Add the bell peppers, onions, garlic & jalapeño and sauté for 3-4 min. Stir in the beans & cumin.

In a large bowl, whisk together the eggs, salsa, parsley, salt & pepper. Pour this mixture over the beans & veggies, then gently stir to combine. Cook, uncovered, for 2 min or until eggs start to set.

Top with the cheese.

Transfer pan to oven and bake 8-10 min or until eggs are completely set and cheese is melted.
