✤1- 15 oz can black beans, drained & rinsed
✤3 roma tomatoes, diced (~415g)
✤2 cucumbers, diced (~600g)
✤2 large colored bell peppers, seeded & diced (~297g)
✤1 large red onion, diced (~307g)
✤1 large ripe avocado, diced (~186g)
✤2 jalapeños, seeded & minced
For the dressing:
✤1/4 cup olive oil
✤1/4 cup fresh lime juice
✤2 cloves garlic, minced
✤1 tbsp (21g) honey
✤1 tsp oregano
✤1 tsp cumin
✤1/2 tsp chili powder
✤ salt & pepper, to taste
❖In a small bowl, whisk together all dressing ingredients. Refrigerate until ready to use.
❖In a large serving bowl, combine all salad ingredients. Pour over the dressing and toss well to combine.
