✤2½ cups berry of choice, washed and prepped
✤3 large eggs, room temperature
✤10 tbsp (120g) sugar
✤1/2 cup (60g) all-purpose flour, sifted
✤1/8 tsp salt
✤1 cup almond milk
✤2 tsp vanilla extract
✤ Powdered sugar, for optional dusting
❖Preheat oven to 350°F (177°C).
❖Lightly grease a 9x9-inch baking dish and dust with a little flour. Add in the berries.
❖In a large bowl, whisk together the eggs, sugar, flour & salt until smooth. Add the milk & vanilla, then whisk until smooth again. Pour the mixture into the dish over the berries.
❖Bake 45-55 min or until lightly browned and toothpick test comes out clean. It will still wiggle a bit when removing from the oven, that’s okay.
❖Cool on a wire rack; it will deflate while cooling.
❖Once cool, dust with powdered sugar if desired.
