Ingredients

2½ cups berry of choice, washed and prepped

3 large eggs, room temperature

10 tbsp (120g) sugar

1/2 cup (60g) all-purpose flour, sifted

1/8 tsp salt

1 cup almond milk

2 tsp vanilla extract

Powdered sugar, for optional dusting

Directions

Preheat oven to 350°F (177°C).

Lightly grease a 9x9-inch baking dish and dust with a little flour. Add in the berries.

In a large bowl, whisk together the eggs, sugar, flour & salt until smooth. Add the milk & vanilla, then whisk until smooth again. Pour the mixture into the dish over the berries.

Bake 45-55 min or until lightly browned and toothpick test comes out clean. It will still wiggle a bit when removing from the oven, that’s okay.

Cool on a wire rack; it will deflate while cooling.

Once cool, dust with powdered sugar if desired.
