

✤3 bell peppers (~369g used)
✤1 cup (60g) panko bread crumbs
✤1/2 cup (56g) parmesan cheese, grated
✤2 tsp garlic powder
✤1 tsp paprika
✤1 tsp oregano
✤1 tsp basil
✤1 tsp salt
✤1/2 tsp black pepper
✤3 large eggs, beaten
✤1 cup (120g) all-purpose flour
❖Preheat oven to 425°F (220°C). Grease a baking sheet or line with parchment/silicone.
❖Carefully cut stem out of peppers and remove stem, core & seeds. Cut peppers crosswise into 1/2-inch ring slices.
❖In a large bowl, combine panko, cheese & seasonings/spices. In a separate bowl, beat the eggs. In a third bowl, add the flour.
❖Dredge the pepper rings in flour, then egg, then panko mix, making sure to coat all sides.
❖Arrange rings on baking sheet and bake about 10 min. Remove from oven, flip all rings, and bake another 10 min or so, until golden brown on both sides.
