Bell Pepper Rings

Ingredients

3 bell peppers (~369g used)

1 cup (60g) panko bread crumbs

1/2 cup (56g) parmesan cheese, grated

2 tsp garlic powder

1 tsp paprika

1 tsp oregano

1 tsp basil

1 tsp salt

1/2 tsp black pepper

3 large eggs, beaten

1 cup (120g) all-purpose flour

Directions

Preheat oven to 425°F (220°C). Grease a baking sheet or line with parchment/silicone.

Carefully cut stem out of peppers and remove stem, core & seeds. Cut peppers crosswise into 1/2-inch ring slices.

In a large bowl, combine panko, cheese & seasonings/spices. In a separate bowl, beat the eggs. In a third bowl, add the flour.

Dredge the pepper rings in flour, then egg, then panko mix, making sure to coat all sides.

Arrange rings on baking sheet and bake about 10 min. Remove from oven, flip all rings, and bake another 10 min or so, until golden brown on both sides.
