Ingredients

1 lb meat of choice

8 dried guajillo chiles

salt, to taste

1 tsp whole black peppercorns

8 cloves garlic, peeled

3 bay leaves

1/2 white onion (~160g)

1/2 tbsp ground cumin

5 whole cloves

1/4 cup white vinegar

Directions

Soak the guajillos in hot water for 5 minutes.

In a blender, add in everything but the meat and blend until well mixed.

Marinate the meat with the sauce for 2 hours.

Cook the meat until the appropriate temperature is reached (depending on the protein).
