✤1 lb meat of choice
✤8 dried guajillo chiles
✤ salt, to taste
✤1 tsp whole black peppercorns
✤8 cloves garlic, peeled
✤3 bay leaves
✤1/2 white onion (~160g)
✤1/2 tbsp ground cumin
✤5 whole cloves
✤1/4 cup white vinegar
❖Soak the guajillos in hot water for 5 minutes.
❖In a blender, add in everything but the meat and blend until well mixed.
❖Marinate the meat with the sauce for 2 hours.
❖Cook the meat until the appropriate temperature is reached (depending on the protein).
