✤1 bunch kale, 12 oz after stems removed
✤1 tbsp olive oil
✤ salt, to taste
✤3/4 cup (84g) parmesan cheese, shredded
❖Preheat oven to 350°F (177°C).
❖If kale is still wet from washing, make sure to dry very well with a salad spinner or paper towel. You do not want any moisture.
❖Lightly spray 2 large baking sheets with oil (or use silicone pads).
❖In a large bowl, add the kale & oil together (do in batches if necessary), stirring to evenly coat every leaf with oil. Place on the baking sheets and sprinkle with salt. Bake 10-12 min, stirring halfway through to ensure they evenly crisp up.
❖Top with the parmesan and bake an addition 5-7 min, until edges are crisp but not burnt, keeping a close eye on them.
