✤3-4 bananas (360g total), sliced
✤6 slices of bread, cut in half diagonally
✤4 large eggs
✤2 large egg whites
✤1 cup almond milk
✤2 tbsp (24g) brown sugar
✤1 tsp vanilla extract
✤1 tsp cinnamon
✤Pinch of salt
✤ Maple syrup, for optional topping
❖Grease a rectangular baking pan.
❖Spread slices from 2/3 of the bananas evenly in the bottom. Layer the bread on top, overlapping as necessary. Arrange remaining banana slices on bread.
❖In a medium bowl, whisk together the eggs, egg whites, milk, sugar, vanilla, cinnamon & salt. Pour the egg mix over the bread, covering it and pushing down the slices so they’re coated. Cover and refrigerate for at least 1 hour, up to 1 day.
❖Preheat oven to 350°F (177°C).
❖Bake uncovered for 30 min or until puffed and light golden brown. Cool for 5 minutes. Drizzle with maple syrup as desired.
