Baby Red Potato Salad

Ingredients

4 cups (~720g) baby red potatoes, cut into small pieces

1/2 cup (~80g) green bell pepper, finely diced

1/4 cup (~35g) red onion, finely diced

3 green onions, diced

1 ½ tsp (8g) Dijon mustard

1 tbsp olive oil

1 tbsp red wine vinegar

2 tbsp (30g) low-fat mayo

salt & pepper, to taste

Directions

Bring a pot of salted water to a boil. Add the potatoes and cook until soft, about 10 min, then drain. Rinse potatoes with cold water until cooled.

In a small bowl, mix together the Dijon, olive oil, red wine vinegar & mayo.

In a large serving bowl, add all salad ingredients, pour over dressing and gently combine well, so as not to mash the potatoes.
