✤4 cups (~720g) baby red potatoes, cut into small pieces
✤1/2 cup (~80g) green bell pepper, finely diced
✤1/4 cup (~35g) red onion, finely diced
✤3 green onions, diced
✤1 ½ tsp (8g) Dijon mustard
✤1 tbsp olive oil
✤1 tbsp red wine vinegar
✤2 tbsp (30g) low-fat mayo
✤ salt & pepper, to taste
❖Bring a pot of salted water to a boil. Add the potatoes and cook until soft, about 10 min, then drain. Rinse potatoes with cold water until cooled.
❖In a small bowl, mix together the Dijon, olive oil, red wine vinegar & mayo.
❖In a large serving bowl, add all salad ingredients, pour over dressing and gently combine well, so as not to mash the potatoes.
