✤1 lb baby carrots
✤2 tsp salt
✤1 tbsp unsalted butter
✤1/4 cup (48g) light brown sugar
✤1/2 tsp ground cardamom
✤Zest of 1/2 orange
❖Bring a medium saucepan filled with water to a boil. Add the carrots & salt and cook about 8 min, until tender.
❖In a separate medium saucepan, melt the butter & sugar over medium heat. Add the cardamom & zest, stirring to combine. Keep this mixture on low while the carrots finish.
❖Drain the carrots well when they’re done and add them to the pan with the sugar. Turn heat back up to medium and stir the carrots to coat for several min.
