

For the dressing:
✤1/4 cup freshly squeezed lime juice
✤1/3 cup olive oil
✤1 tbsp maple syrup
✤2 tsp Dijon mustard
✤ salt & pepper, to taste
For the salad:
✤2 avocados, diced (~360g)
✤4 cups (~580g) strawberries, quartered
✤1/2 cup (90g) uncooked quinoa, rinsed & drained
✤1/2 cup (60g) chopped walnuts, toasted
✤6 oz feta cheese, crumbled
✤~77g spring mix
❖Cook the quinoa according to package directions and let cool.
❖In a small bowl, whisk together dressing ingredients until emulsified.
❖In a large serving bowl, combine all salad ingredients and drizzle the dressing over. Toss well to combine.
