Avocado & Strawberry Quinoa Salad

Ingredients

For the dressing:

1/4 cup freshly squeezed lime juice

1/3 cup olive oil

1 tbsp maple syrup

2 tsp Dijon mustard

salt & pepper, to taste

For the salad:

2 avocados, diced (~360g)

4 cups (~580g) strawberries, quartered

1/2 cup (90g) uncooked quinoa, rinsed & drained

1/2 cup (60g) chopped walnuts, toasted

6 oz feta cheese, crumbled

~77g spring mix

Directions

Cook the quinoa according to package directions and let cool.

In a small bowl, whisk together dressing ingredients until emulsified.

In a large serving bowl, combine all salad ingredients and drizzle the dressing over. Toss well to combine.
