Arugula Ascension Salad

Ingredients

For the dressing:

1/4 cup olive oil

2 tbsp lemon juice

1 tsp Dijon mustard

1 tbsp maple syrup

1/4 tsp cumin

salt & pepper, to taste

1 small clove garlic, minced

For the salad:

1- 15 oz can chickpeas, rinsed and drained

8 oz radishes, cut in half and very thinly sliced

2 cups (~50g) baby arugula

1 large avocado, diced (~146g)

1 small leek, white & light green parts only, halved and thinly sliced (~97g)

2 oz feta cheese, crumbled

Directions

In a small bowl, whisk together dressing ingredients.

In a large serving bowl, combine all salad ingredients.

Add dressing and toss to combine.
