For the dressing:
✤1/4 cup olive oil
✤2 tbsp lemon juice
✤1 tsp Dijon mustard
✤1 tbsp maple syrup
✤1/4 tsp cumin
✤ salt & pepper, to taste
✤1 small clove garlic, minced
For the salad:
✤1- 15 oz can chickpeas, rinsed and drained
✤8 oz radishes, cut in half and very thinly sliced
✤2 cups (~50g) baby arugula
✤1 large avocado, diced (~146g)
✤1 small leek, white & light green parts only, halved and thinly sliced (~97g)
✤2 oz feta cheese, crumbled
❖In a small bowl, whisk together dressing ingredients.
❖In a large serving bowl, combine all salad ingredients.
❖Add dressing and toss to combine.
