✤1 cup (180g) dry quinoa, rinsed well
✤1½ cups water
✤1 tsp cinnamon
✤2 tsp vanilla extract
✤1/2 cup unsweetened applesauce
✤1/4 cup (40g) golden raisins
✤1 cup almond milk, warmed
✤1-2 apples, diced (~240g)
✤1/4 cup (~28g) pecans, chopped
❖In a med saucepan, combine quinoa, water, cinnamon & vanilla and bring to a boil. Reduce heat and simmer, covered, about 15 min or until cooked and fluffy.
❖In a large bowl, combine the quinoa with the rest of the ingredients and stir well to combine.
❖Top with extra cinnamon as desired.
