Apple Cinnamon Quinoa Bowl

Ingredients

1 cup (180g) dry quinoa, rinsed well

1½ cups water

1 tsp cinnamon

2 tsp vanilla extract

1/2 cup unsweetened applesauce

1/4 cup (40g) golden raisins

1 cup almond milk, warmed

1-2 apples, diced (~240g)

1/4 cup (~28g) pecans, chopped

Directions

In a med saucepan, combine quinoa, water, cinnamon & vanilla and bring to a boil. Reduce heat and simmer, covered, about 15 min or until cooked and fluffy.

In a large bowl, combine the quinoa with the rest of the ingredients and stir well to combine.

Top with extra cinnamon as desired.
