Apple Cabbage Stew

Ingredients

1 tbsp unsalted butter

1 leek, white parts only, sliced thin (~134g)

1/2 head green cabbage, chopped thin (~494g)

1 tsp dried thyme

6 cups chicken broth

2 apples, red or green, diced (~389g)

salt & pepper, to taste

Directions

In a large stock pot, melt the butter over medium heat and add the leeks. Cook for a few minutes, until soft and just shy of browning.

Add the cabbage and cook about 10 min, or until cabbage has softened considerably.

Add the thyme & broth, followed by the apple, salt & pepper. Cook for about 15 min more, until apples are softened but not mush.
