✤1 tbsp unsalted butter
✤1 leek, white parts only, sliced thin (~134g)
✤1/2 head green cabbage, chopped thin (~494g)
✤1 tsp dried thyme
✤6 cups chicken broth
✤2 apples, red or green, diced (~389g)
✤ salt & pepper, to taste
❖In a large stock pot, melt the butter over medium heat and add the leeks. Cook for a few minutes, until soft and just shy of browning.
❖Add the cabbage and cook about 10 min, or until cabbage has softened considerably.
❖Add the thyme & broth, followed by the apple, salt & pepper. Cook for about 15 min more, until apples are softened but not mush.
