✤3 tbsp (~51g) apple butter
✤2 tbsp maple syrup
✤1 tbsp (15g) Dijon mustard
✤1 tsp soy sauce or tamari
✤1/2 tsp cider vinegar
✤1 tsp salt
✤4- 6-8 oz boneless pork chops, ~1 inch thick
❖Adjust oven rack to middle position and heat oven to 275°F (140°C). Line a rimmed baking sheet with foil and set a wire rack in it. Spray rack with oil spray.
❖In a small bowl, stir together the apple butter, maple syrup, mustard, soy/tamari & cider vinegar.
❖Sprinkle the salt evenly over both sides of the chops. Place them on the prepared rack and brush 1 tsp glaze on the tops and sides of each chop. Roast until meat registers 135-137°F, 40-45 min.
❖Remove pan from oven and heat broiler. Brush 1 tbsp glaze on tops and sides of each chop. Return pan to oven and broil until glaze is bubbly and slightly charred in spots, 3-6 min.
❖Let rest 5 min.
