

✤250g (9 oz) self-rising flour
✤1 tsp baking powder
✤225g (8 oz) caster sugar
✤2 large eggs, room temperature
✤1/2 tsp almond extract
✤ Pinch of salt
✤10 tbsp unsalted butter, melted
✤225g apples, peeled, cored & thickly sliced
✤100g ready to eat dried apricots, chopped
✤25g flaked almonds
❖Preheat oven to 325°F (165°C). Grease an 8-inch loose bottomed deep, round cake tin and line the base with parchment.
❖In a large bowl, add the flour, baking powder, sugar, eggs, almond extract & melted butter, then beat well for 1 min. Add the apples & apricots to the bowl and gently mix them in.
❖Spoon batter into prepared tin, gently level the surface and sprinkle with the flaked almonds.
❖Bake for 60-90 min, until cake is golden, firm to touch and starting to shrink away from side of tin.
❖Leave to cool in tin awhile, then turn out, peel off parchment and serve.
