✤2 cups (240g) all-purpose flour
✤1 tsp baking soda
✤1/4 tsp salt
✤2 oz (half stick) unsalted butter, softened
✤1/8 cup plain yogurt
✤3/4 cup (144g) brown sugar
✤2 eggs, room temperature, beaten separately
✤2 ⅓ cups (~577g) very ripe bananas, mashed
❖Preheat oven to 350°F (177°C) and lightly grease a loaf pan.
❖In a large bowl, whisk together the flour, baking soda & salt.
❖In a separate large bowl, combine butter, yogurt & brown sugar and beat using an electric mixer until light and fluffy; mixture should be noticeably lighter in color. Add the eggs one at a time, allowing each egg to blend into the butter mix before adding the next.
❖Stir in the mashed bananas until well blended.
❖Pour the wet ingredients into the dry and stir until just moistened.
❖Transfer batter into the loaf pan and bake for 65-75 minutes, or until skewer inserted into the center comes out clean.
❖Let bread cool in pan for 10 minutes, then turn out onto wire rack to cool completely.
