Amanda’s Banana Bread

Ingredients

2 cups (240g) all-purpose flour

1 tsp baking soda

1/4 tsp salt

2 oz (half stick) unsalted butter, softened

1/8 cup plain yogurt

3/4 cup (144g) brown sugar

2 eggs, room temperature, beaten separately

2 ⅓ cups (~577g) very ripe bananas, mashed

Directions

Preheat oven to 350°F (177°C) and lightly grease a loaf pan.

In a large bowl, whisk together the flour, baking soda & salt.

In a separate large bowl, combine butter, yogurt & brown sugar and beat using an electric mixer until light and fluffy; mixture should be noticeably lighter in color. Add the eggs one at a time, allowing each egg to blend into the butter mix before adding the next.

Stir in the mashed bananas until well blended.

Pour the wet ingredients into the dry and stir until just moistened.

Transfer batter into the loaf pan and bake for 65-75 minutes, or until skewer inserted into the center comes out clean.

Let bread cool in pan for 10 minutes, then turn out onto wire rack to cool completely.
