✤1½ cups (180g) all-purpose flour
✤2 tbsp (24g) sugar
✤Pinch of salt
✤3 tbsp butter, melted
✤1/4 cup (30g) unsweetened shredded coconut
✤2 tbsp (14g) flax seed meal
✤1/4 cup (~45g) mini dark chocolate chips
✤1 cup light coconut milk
✤1/3 cup (~85g) almond butter
✤1 tsp vanilla extract
❖Preheat oven to 350°F (177°C). Line an 8-inch square pan with parchment.
❖In a medium bowl, whisk together the flour, sugar & salt. Mix in the melted butter until crumbly. Add the mixture to the pan and gently press it out to form the crust.
❖On top of the crust, sprinkle an even layer of coconut, flax & chocolate chips.
❖In a separate bowl, whisk together the coconut milk, almond butter & vanilla until well combined. Layer this evenly in the pan.
❖Bake 28-30 min or until firm but not deeply browned.
❖Chill in freezer at least 1 hour before slicing. Store bars airtight in refrigerator.
