Almond Butter Biscuit Bars

Ingredients

1½ cups (180g) all-purpose flour

2 tbsp (24g) sugar

Pinch of salt

3 tbsp butter, melted

1/4 cup (30g) unsweetened shredded coconut

2 tbsp (14g) flax seed meal

1/4 cup (~45g) mini dark chocolate chips

1 cup light coconut milk

1/3 cup (~85g) almond butter

1 tsp vanilla extract

Directions

Preheat oven to 350°F (177°C). Line an 8-inch square pan with parchment.

In a medium bowl, whisk together the flour, sugar & salt. Mix in the melted butter until crumbly. Add the mixture to the pan and gently press it out to form the crust.

On top of the crust, sprinkle an even layer of coconut, flax & chocolate chips.

In a separate bowl, whisk together the coconut milk, almond butter & vanilla until well combined. Layer this evenly in the pan.

Bake 28-30 min or until firm but not deeply browned.

Chill in freezer at least 1 hour before slicing. Store bars airtight in refrigerator.
